Potassium sorbate is the potassium salt of sorbic acid, commonly used as a preservative in food products such as cheese, bakery goods, beverages, dried sausages, plant base spreads, and more.

Potassium sorbate is synthetically produced by neutralizing sorbic acid with potassium hydroxide. This substance exhibits antifungai, antimicrobial, and antibacterial properties. Its preservation mechanism is almost similar to sodium benzoate.
