From 100% cocoa mass to 1% fat content Cocoa powder is obtained by grinding cocoa cake, which is the pressed, lower fat cocoa paste. Available in both Dutch processed (Alkalized) and Natural.
In store, preferably at temperature between 15 and 22º C and relative moisture less than 60%.
In bags of 25 Kg of three layers (paper, plastic, paper) or in polyethylene big-bags
